Very recently we were invited to try the food which will be served by L Fisher Hotel (Bacolod City, Negros Occidental) to its guest as part of their Singaporean Food Festival. L Fisher Hotel flew in a Singaporean Chef in the person of Chef HK Tan of the Singapore Food Republic and Nasi Galleria Fame.
While I’m a bit familiar with some Singaporean cuisines, listening to Chef HK Tan’s story of each of his food made me excited to indulge.
For those who have visited Singapore, it is easy to say that this country influences a diverse culture. Singapore’s cuisines are also varied, containing elements derived from several ethnic groups, as a result of its history as a seaport with a large immigrant population. Influences include the cuisines of the native Malays and the largest ethnic group, the Chinese, as well as Indonesian, Indian, Peranakan, and Western traditions. Influences from other regions such as Sri Lanka, Thailand, and the Middle East are also present.

Chef HK Tan demonstrating how the Hainanese Chicken Rice should be eaten
This was the first dish served to us when we visited L Fisher Hotel during the food tasting. Chef HK Tan was very excited about demonstrating to us how to eat this dish.
The Hainanese chicken rice is a dish that consists of succulent steamed white chicken that is cut into bite-size pieces and served on fragrant rice with some light soy sauce. To make the recipe even better, it is topped with coriander leaf and sesame oil and accompanied by a delicious garlic-chili dip. According to Chef HK Tan, the secret to making this dish delicious is the way how the chicken is being simmered.
This dish is a stir-fried rice noodle strips”, is a favorite noodle dish and is considered a national favorite in Singapore.
It is made from flat rice noodles or kway teow, stir-fried over very high heat with light and dark soy sauce, chili, and other ingredients.
I was the first who was served by Chef HK Tan himself of this dish. Served in a slice of baguette I tried his beef rendang which has a unique flavor, and by varying the amounts of sugar and chilies a whole range of effects can be produced.
Beef Rendang is a dry spiced dish of tenderly simmered meat offers the typical Singapore taste of coconut, balanced with robust, tangy spices.
Chicken curry is a common delicacy in Asia. A typical South Asian curry consists of chicken stewed in onion and tomato-based sauce, flavored with ginger, garlic, chili peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, cardamom and so on.
Because of the variety of dishes that we tried, I opted to eat those dishes with baguettes.
This dish is very similar to our very own adobong kangkong. With the variety of meat dishes that we tried, this veggie dish comes as a proper balancing dish.
This dish is also very similar to our pork humba. But I don’t know how they cook it — it was not oily. It also has this whole egg which was an excellent ingredient. Chef HK Tan said the egg was marinated in a secret concoction before it was included in the dish.

Not really familiar with the Singaporean Cuisine but of all the dishes listed here, the only one I am really aware of is the Chicken Curry... My lola used to cook this dish for us but I'm not sure how different between Filipino Chicken Curry to the one in Singapore... but they all look great and definitely something to try!
I don't know if they put coconut milk in SG Chicken Curry..coz I didn't tasted it :)
I like Hainanese Chicken Rice because of its simplicity. I'm curious about the taste of Beef Rendang, looks like our caldereta.
Beef rendang doesn't have tomato paste..they put some coconut milk :)
Asian foods have similarity in ingredients and texture but very different in tastes. But usually, we prefeeref our own way of cooking and taste. I like the Ilonggo taste of pinamalhan, sinabawan, adobo, kinilaw, inasal, etc...with my own ingredients to explore about.
