5 EXCITING DISHES AT BYRON’S BACK RIBS HOMESITE

Imagine the goodness of grilled mouth-watering back ribs that fall off the bone when you bite into it. That’s what you’re going to experience when you come to Byron’s Back Ribs and Grill.  Byron’s is a dining place located in a subdivision of the Homesite area.  It first started in 2004 as a barbecue stand selling back ribs for only P50. Later on, they were able to rent a space in their home where they put up a Nipa hut inspired restaurant. The place is now managed by the Diola sisters and the name Byron refers to their father, Byron Diola.

At Byron’s, food is served at long wooden tables and benches. The place is not air-conditioned so when you come over, it‘s best that you wear comfortable and casual clothing to enjoy the whole dining experience. But even with this setback, I am amazed at how people would still seek out the place for its delicious and budget-friendly specialties.

On a sunny Sunday, my colleagues and I headed to Byron’s for a sumptuous lunch. I ate almost all the grilled dishes they served, but my Top 5 are the following:

1. Baby Back Ribs– Perfectly marinated and grilled ribs, basted with their very own sauce and served with Java rice. The meat is just so tender and moist. The smoky barbecue flavor makes it more inviting and appetizing. Still, at P150.00 I like the spicy-tangy flavor of the barbecue sauce.  Byron’s customers would often say it’s “Namit” (delicious).

2. Sizzling Sisig– I like the crunch of Byron’s sisig. Pork ears, liver, and skin boiled and grilled. Then sizzled until cooked to its desired taste and texture. It is flavorful enough that seasoning is optional.

3. Beef Nilaga– Tasty soup with tender beef choice cuts, sliced langka, and fresh red chili. It has a mild sour and spicy taste that Bacolodnons love.

4. Grilled Bangus– marinated and grilled bangus (milkfish) served hot on a sizzling plate. I tasted a touch of pepper and calamansi.

5. Fruit Punch– I added this on my list because it  is so refreshing! Chunks of watermelon, shredded buko (coconut meat) and pineapple bits in a glass full of watermelon and buko juice combined. While others want their fruit punch as a drink, I like it more as a dessert.

We also tried the Spare Ribs and Pork Barbeque.  Both were well prepared though but they were not my favorites.

Byron’s Back ribs and Grill is located at Block 8 Stork St., Homesite, Brgy. Montevista, Bacolod City.  They also have branches at Homegrown (across Café Bobs) along Lacson St., Bacolod City and at The Ayala District North Point Mall in Talisay City. Soon they will open another branch at the Robinson’s Galleria Mall in Cebu. For reservations, you may call 0910-425-74-72. Byron’s is open daily at 11:00 am to 2:00 pm and 4:30 pm to 9:00 pm.
