Filipino food has always had this rich and distinct flavor that even in our own household we can add up various ingredients in a pot and the taste would be just great. Classic examples are adobo and pinakbet (an Ilokano vegetable dish). In Bacolod City, the list of restaurants that serve Filipino food is growing, so Bones & Belly made sure that they serve Pinoy favorites with a twist so that customers can still enjoy the authentic flavors of every dish.

Bones & Belly is managed by the owners of Pearl Manor Hotel. The restaurant underwent renovation and has recently opened to serve its customers especially those who want to eat a hearty and affordable breakfast meal. The restaurant is spacious enough and also has aircon and al fresco dining areas so customers can choose where they are most comfortable to unwind after work or just relax during a break from class hours.

While waiting for the main course to be served, I had pieces of toasted pastillas which were served in a white tin bowl. It smelled like burnt milk but when I started munching on these milky pieces, I just couldn’t stop. It was really good. A pack of these is sold for P110.

We enjoyed great food and service at Bones and Belly. As their name suggests, most of their food offerings are yes—bones and belly! So now I give you the top 5 exciting and reasonably-priced treats that are good for sharing too.

1.) Bulalo– this was served and presented to us piping hot and in a kaldero-like serving dish. Some may think that Cansi ( a popular Ilonggo beef bone marrow in sour soup) and Bulalo ( a lutong tagalog dish) are almost the same. Oops, we were told that both beef dishes may have the same richness in flavor but they are not exactly the same. Bulalo has a richer and thicker bone marrow, collagen and meat that sticks to the bone, making this dish very flavorful and really satisfying. If you don’t have high cholesterol, this dish can be eaten in moderation since studies have shown that collagen and meat are good sources of protein and vitamins.
Note: those who have cholesterol and hypertension issues should think twice when eating this.
We enjoyed the Bulalo, I’m sure you guys will too.

2.) Sizzling Cansi- tender beef shoulder choice cuts with bone marrow cooked in sizzling hot plate. The rich gravy gave this dish a peppery smoky taste that meat lovers will love. Served with sliced carrots and potatoes, every bite of sizzling cansi goes well with rice. (Pho 230 for 2 persons)

3.) Grilled Tuna Belly– tuna belly cut marinated and grilled. The fish meat was tender and fresh. Tuna, as we know, has a distinct flavor but with the marinade used and sawsawan of soy sauce, calamansi and sili, this grilled fish was a star.

4.) Chocolate Coated Back Ribs– Yes, you read it right, it’s chocolate! Chef Auggie said it was his own concept to mix dark chocolate with back ribs. It may sound outrageous to others but it is delicious. Dark chocolate rubbed and coated every slab of ribs so you’d taste the bitter-sweet flavor of the dark chocolate and the smoky flavor of the ribs in each bite. Serves 2-3 persons.

5.) Liempo– since I had a taste of almost everything that night, I just had a slice of liempo. Unlike other liempo dishes I’ve tried that were deep fried and very crunchy, Bones & Belly liempo is baked first then deep fried so the meat is tender and juicy. Serves 2-3 persons.

Bones & Belly also serves pork sisig, burger steak, fried chicken (free range chicken), callos de bilbao among others. For all day breakfast at Php 95 (served with plain rice and egg), they have dried beef tapa, chorizo pudpod, pork tocino, corned beef, bacon slices, crispy danggit, and Hungarian sausage.

Open Mondays to Saturdays- 8am-11pm
