1. Sharyn’s Cansi. I have tasted different versions of bulalo but so far nothing beats Cansi, the Ilonggo version of bulalo, that is the main specialty of Sharyn’s Cansi House.  Even when I was in Manila, I would still crave for cansi as only a native of this city can.

Sharyn’s cansi is prepared from choice cuts of beef bulalo sourced meticulously by the owner.  The fresh meat gives the soup it’s distinct, flavourful taste. The owner, Tita Delia Perez, mentioned that it is the batuan fruit, (a souring agent that can be found on Negros island) that gives a zesty flavor and aroma to the Cansi. On my visit, cansi was served piping hot I can smell the aroma from a slight distance. The broth had a rich flavorful beefy taste, and the meat is just so tender that it falls off the bone.  The best part is the melt in your mouth tendons which is my favorite. This dish is really a standout and is highly recommended.

2.Kinilaw na Tangigue. Another must try is the Kinilaw na Tanguige made from fresh tangigue cut in bite sizes, mixed with calamansi, ginger, and chili. It has a tangy and creamy taste that can really open your taste buds.

3. Crispy Cansi. The Crispy Cansi is similar to adobo flakes which resulted from Tita Delia’s kitchen experiment, is also a house favorite.

Other lutong bahay specialties are Chicken Adobo, Fried Daing na Bangus, Tambo sa Gata, Guinisang Monggo and a lot more. Actually, they can prepare other dishes as requested by their customers.
